We really couldn’t tell this Pumpkin Roll was Gluten Free! It was fluffy and had a really nice flavor profile. The original recipe we modified was from Kimberly’s Gluten Free Kitchen. We will link it below. This was the perfect dessert to enjoy in the fall.
A few tips:
- When you pull the sheet pan out of the oven make sure you immediately plop it out on the cotton towel and roll it up. It should cool rolled up or it will not form later on without cracking.
- The parchment paper makes life a whole lot easier but isn’t absolutely necessary. We realized we didn’t have any when we went to make it so decided instead to heavily grease the pan before baking.
Here is the recipe:
Ingredients:
- 1/4 cup powdered sugar
- 3/4 cup gluten free flour (we used Pillsbury Best Gluten Free Flour)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup canned pumpkin
- 8 oz cream cheese (room temperature)
- 8 tbsp butter (softened)
- 1 1/2 cup powdered sugar (sifted)
- 1 tsp pure vanilla extract
- powdered sugar (to sprinkle on top)
Instructions:
- Preheat the oven to 375 degrees.
- Heavily grease 10 x 15 sheet pan (or grease and line with parchment paper).
- Sprinkle powdered sugar on a thin cotton kitchen towel.
- Get out a small bowl and combine the flour, baking powder, baking soda, cinnamon, cloves, and salt.
- Beat the eggs and granulated sugar until thick. Add pumpkin and flour mixture slowly.
- Evenly distribute this mixture onto the sheet pan and bake for 13 min. The top should wiggle or “spring back” when touched.
- Beat the cream cheese and butter together. Add in sifted powdered sugar and vanilla and beat until smooth. (We added more powdered sugar than the original recipe. We thought it needed to be a little sweeter.)
- Slowly unroll the cake and carefully spread the cream cheese mixture.
- Re-roll the cake and wrap in plastic wrap. Put it in the fridge for at least one hour before serving.
- Don’t forget to sprinkle the powdered sugar before serving!
